" gras - graisse
sous forme isolée (…) la mention est "gras de X" ou "graisse de X" (X espèce animale), "viande de X" (1, 2) ,si le gras est utilisé sous forme de morceaux constitué de maigre et de gras, on peut indiquer :"maigre de X, gras de X" (si maigre > gras) ou « gras de X, maigre de X » (si gras > maigre)"
"X" steht immer für das Tier. Nun scheint mir die Unterteilung gras-graisse ziemlich knifflig. Es gibt auch noch "maigre de x" an anderer Stelle, wo ich mir dann noch "mageres Schweinefleisch" (z.B.) vorstellen kann. "graisse de porc" habe ich als Schweinefett identifiziert, wobei sich aber die Frage stellt, wie ich das in Kombination mit "x" angeben soll, noch dazu so, dass ein Unterschied zu "gras de x" deutlich wird - sofern es den gibt. Hat jemand eine Idee? |
