Explanation:
VIEILLES VIGNES
Ad Ay e Bouzy la maison possiede tre piccoli appezzamenti (circa 50 acri) che hanno resisistito alla fillossera. I vigneti sono non innestati (franches de pied) e vengono lavorati manualmente.
Le viti sono state reimpiantate negli anni 1972, 1986 e 1995 secondo il metodo tradizionale **“en foule”**, non alllineate, che da’ un rendimento inferiore del 35% rispetto ad una vigna su pali.
Lo Champagne e’ composto al 100% da pinot nero vinificato in vecchie botti di rovere, matura 5 anni sui lieviti prima del degorgement.
La produzione e’ limitata a circa 3.000 bottiglie, e rappresenta il museo vivente delle tradizioni champenoises.

La généralisation de la plantation des ceps en lignes espacées dans les terrains peu accidentés a favorisé l'introduction de la charrue à traction animale à partir du milieu du 19ème siècle. Elle s'est ainsi substituée à la bêche pour retourner le sol.
