Errore mio, il mio suggerimento è sbagliato! Continuando a cercare ho trovato, come suggerisce giustamente Agnes, che il termine in italiano è "grande fuoco" o "granfuoco" e non ha a che vedere con la tonalità di blu, ma con la temperatura di cottura (si tratta di colori che resistono a tale temperatura).
