| mousseux "fegato" (dei crostacei) Explanation: Qui si capisce che si tratta di una parte del corstaceo, non di un preparato, l'espressione non mi sembra molto comune in francese (trovo solo un rif. per il granchio becquevortgerard.ibelgique.com/sauce%20citronnelle.htm) Dalla mia esperienza culinaria, si tratta di quello che viene chiamato più spesso "foie", in realtà più che di "fegato" si tratta dell'epatopancreas, una sostanza cremosa verdognola molto saporita e che si riserva di solito per salse ecc. E' presente nel granchio, nell'astice ecc.
