Sul petit robert per "supreme" si parla di "blancs de volaille préparés en chaud-froid". Quindi sembra che siano i petti. Il chaud-froid è servire il piatto in gelatina o con maionese. Cmq ho trovato anche altre soluzioni, nel senso che su alcuni siti si parla anche di piatto servito con crème fraiche e brodo di pollo. A occhio e croce sono petti di pollo con una crema o salsa, il tuo contesto ti aiuta?
