beh, le "canard" in Francia è un'istituzione, non credo proprio si possa trovare un equivalente. Come sempre, in questi casi, non si può far altro che chiarire il concetto aggiungendo una breve spiegazione sul significato del sostantivo

L'Ordre des Canardiers a été fondé en janvier 1986 par Michel Guéret, Président Fondateur, accompagné de 20 personnalités sensibilisées à la sauvegarde de notre patrimoine culturel et de notre art culinaire. Ce dernier est symbolisé par une recette régionale et ancestrale, le Caneton à la rouennaise.
Le Trophée International de l'Ordre des Canardiers fut instauré dès 1989 afin de promouvoir cette recette chez les professionnels.
***L'Ordre des Canardiers est une association régie par la loi française de 1901 *** comportant deux catégories de membres: les Maîtres Canardiers qui sont des professionnels servant, dans leur établissement, le Caneton à la Rouennaise et les Gentilshommes ou Dames Canardiers, gourmets appréciant la recette et partageant les objectifs de l'association. Les Canardiers d'Honneur relèvent de l'une ou l'autre catégorie, ont rendu un service notoire à l'Ordre et sont reconnus dignes de cette distinction. Le Maire de Rouen est de droit Grand Canardier d'Honneur. Les membres se doivent amitié entr'aide et bonne humeur. L'Ordre des Canardiers a créé son blason: il s'inspire des armes de la ville de Rouen et représente un caneton joyeux portant une bannière sur laquelle figure une presse à canard, les trois fleurs de lys sont remplacées par trois toques de cuisinier. L'ordre des Canardiers a fait composer spécialement un hymne, celui-ci est joué à l'ouverture de chaque cérémonie, qui se déroule selon un protocole rigoureux.
