Les niveaux d’eau (ou de saumure) dans les diverses citernes, bacs, herses.

Si parla di un impianto per la conservazione dei formaggi. Da quanto capisco dovrebbe essere un contenitore, ma non trovo la traduzione giusta ("erpice" come suggerisce Eurodicautom non penso proprio).
