Le pressage traditionnel fournit en moyenne, pour 100 Kg d'olives traitées, 20 Kg d'huile, 35 Kg de résidus d'olive appelés grignons, enfin 45 Kg d'eau, ce que l'on appelle les margines, qui viennent s'ajouter à l'eau utilisée pour le lavage des fruits préalablement au pressage.

Residuo de la elaboración del aceite y formado por los restos de la molienda de las aceitunas. Suele utilizarse actualmente como abono vegetal previamente tratado.
