"Harina de fuerza" es una harina que contiene más gluten con respecto a la harina normal. Por lo que he podido encontrar, la"farine du gruau" también se caracteriza por tener más gluten.

La farine de gruau tirée du blé, existe en types 45 et 55, est plus riche en gluten (11 % contre 8 %) et lève deux fois plus que la farine ordinaire. On l'emploie par exemple pour le pain au lait.

La fuerza de una harina, la da el contenido de gluten que tiene, a más gluten, más fuerza tiene la harina.
El gluten es una proteina.
De la cantidad total de proteinas que tiene una harina el gluten representa el 80%.
