Un "écart de régime" es una ocasión en la que tomas más calorías de las previstas en la dieta. Es decir, te saltas la dieta, la descuidas, la rompes, etc. Hay muchas formas de decirlo. Cuando hay que formar un sustantivo, para mí la mejor opción es salto.

Como dice Miguel, lo que más se dice es saltarse el régimen, pero en mi opinión en sustantivo no queda muy bien, lo de "salto del régimen".
También podrías pasarlo todo a una forma verbal:
"No observar correctamente la terapia o saltarse el régimen".

Leyendo mejor la pregunta, mi respuesta no cuadra con la explicación: "apport excessif de sodium et/ou de liquides".
Iría mejor algo de tipo: régimen inadecuado...
