Supongo qeu se refiere a levantar la manivela que está "enfoncéee", pero no sé si puedo poner "desplegar la manivela".

Extraer la manivela


Explanation:
Si es lo que me imagino, la manivela está "hundida" en una rueda cilíndrica y hay que sacarla (extraerla) de esa rueda; por eso se usa "extraer la manivela" que es mucho más natural que "déplier-desplegar". Los franceses, con ello, quieren decir que esa manivela hay que sacarla girándola, y que "como está oculta" se despliega.
