"scharf anbraten" vil sige at svitse eller brune - altså ved høj varme i kort tid. "brune" passer bedre end "svitse" hvis det er kødstykker der er tale om.
"garen" ville jeg i denne forbindelse oversætte med at stege, eftersom det jo er en stegegryde vi har tale om.
