German term or phrase: Marktwareanteil
I'm translating about the quality of a new variety of barley.

It also appears in a table under Qualitätseigenschaften

marketable fraction
Explanation:
Judging from your context, I would say marketable fraction, what is actually sold for consumption, brewing, feed, or whatever, i.e., the grain itself, as opposed to the non-usable parts of the plant, such as the straw, chaff, etc. (not that these parts don't have their uses too). And a barley variety that had a high grain yield would be assigned to a correspondingly higher APS (Auspraegungsstufe) for that characteristic. Marketable fraction generates quite a few google hits in this context.
