(in Latin it would be "ecclesia sanctissimum (or sanctissimorum, I do not remember my Latin!?) martyrum Gervasii et Protasii...)
so I think it should be a little more like "holy martyrs" than "Saints".
I do not know if there is a standard translation for "sanctissimus", if it exists, you should use that.
Anyway it is Latin and no Germanisation.
