I have toyed with other possibilities such as migrating lip, travelling lip, etc., but in essence these say the same thing, i.e. the lip moves, so as I intend to send off my translation this evening it looks like "moveable" will be the term I use.

Hello Patrick, I guess "Wander" means that it is not fixed in a certain position but can be shifted to fit the contact surface. I assume there is no active part on part of the sealing lip itself actually, notwithstanding that the German term suggests so.

I had considered this, but since posting this question I have been wondering whether the use of "Wander" is meant to imply something like 'migrating' or 'creeping'. However, failing all else, I may come back to your suggestion.
