I know it means pork "something" pieces, but Laxe is strange to me. The text goes as follows:
Als Testober¬flächen dienten quer geschnittene sterilisierte Stücke aus der Laxe des Schweins; zur Kontaminierung wurden die Testkeime gewählt.

I've seen a lot of different translations for Haxe or Hachse. Knuckle of pork is another one.
