It might be a cyme, but paniculate seems the best bet. See the drawings of the various forms in the wikipedia article to make sure.

umbel-like inflorescence

Explanation:
Is how my Hamlyn Wild Flowers book describes the flowers of the Common Centaury. Obviously depends on your target audience; umbrella-shaped would be less formal
