German term or phrase: einschlagen
This is all about making Pita and they are talking about "das Einschlagen der Pita". Unfortunately I don't have any context other than this:

Nadira war vollauf mit dem einschlagen der Pita beschäftigt und hörte nicht, wie die Frauen von der Gegenwart wieder in die Vergangenheit glitten.

Does this mean to fold it?

Explanation:
In this case it's obvious that this is not a recipe/instruction, it's part of a narrative, so I'd just work around it using something like this:

"Nadira was completely absorbed in preparing the pita dough and didn't hear..."/"was so absorbed in her preparation of the pita dough that she didn't hear.."

neutral  Bianca AH: What is the context? I can imagine that if the setting is of a home somewhere in the Midd East (or wherever Pita originates), they would be making or, as Cilian suggests, kneading the dough, and not preparing the pita to be eaten.

neutral  Steven Sidore: not sure on this one, Cilian; you'd knead the dough, but would you 'knead the edges' before pressing on them, as per Sonja's example?

  -> I'm by no means sure either (though I doughn't see any mention of Ränder in the original). Einschlagen can also mean 'to wrap' (or to be hit by lightning, but somehow I don't think that's right here)

Explanation:
Pita wird aus Hefeteig hergestellt. Wenn Hefeteig nach dem aufgehen wieder zusammengeknetet wird heißt das einschlagen. Auf englisch wird oft punching down benutzt.
