I think they probably used it as an alternative to \"whole shell eggs\" (whatever THAT is in German!), which are sometimes used in recipes.

  -> I'd use "beaten egg" no matter how many eggs were used, but maybe that's old-fashioned? ;-)

Explanation:
Eimasse is a term used in German Cook / Baking Books, to describe what should be done with the egg yolks that have been mixed with sugar and or flour and spices. Normally it says something like: "die geschmolzene Schokolade nun unter die Eimasse heben". You prepare the egg mixture onto which you add something. The egg mixture is cold, and the other ingredient is usually hot! Used for parfaits, dough’s, desserts etc…!

If it would be \"beaten egg\" the German term would be \"geschlagene Eier\" meaning beaten whole -white and yolk- eggs!

agree  mbrodie: just logged in to put this myself as the thought suddenly popped into my head today - if something has been added to the eggs then we would say egg mixture
