German term or phrase: Wendungen überlassen
Die meisten Gäste des Roten Hauses überlassen nämlich die Wendungen lieber dem Fleisch in der Pfanne als der geschraubten Bezeichnung auf der Karte.

From a description of an Austrian restaurant.

Wendung überlassen
the proof of the pudding is in the eating

Explanation:
I would think something along these lines might do the trick, i.e. most guests tend to believe that the proof of the pudding is in the eating, rather than relying on tortuous/pretentious descriptions on menus. Can't think of a direct analogy with meat off the top of my head!

most guests have more faith in the chef's cooking, than they do in the rather overblown menu
