I can't imagine that there could possibly be a fixed term in the anglo-saxon world for something as exotic as this. A Hippe is a brittle wafer which would describe the process of how the brittle is made.

neutral  Anne-Mette: Anne, I didn't mean crackling, that's "Grieben"! There would not have been the necessity of the "Hippe", a wafer produced with sugar and egg-white. I guess they won't make the recipe public ;-)?

Explanation:
Bei originalen Hippen (in der suessen Version) wird der Teig aufs Blech gestrichen und nach dem Backen und Abkuehlen ist das dann so eine Art knusprige Waffel. Es gibt auch eine Version wo die Hippen vor dem Abkuehlen eingerollt werden, das wird dann oft Hohlhippen genannt.
In der Version mit dem Speck kann ich mir nur vorstellen dass der erkaltete knusprige Speck (daher Krokant i guess...) dann halt mit Feinbitterkuvertüre ueberzogen wird und daher wuerde ich die Uebersetzung "crisp bacon wafer" vorschlagen.

neutral  Anne-Mette: Krokant - brittle - is the result of breaking up a very sugary wafer, usually made with sugar and roasted nuts. The description was Schweins-hippen-krokant, so we can't stop at the wafer.
