so the question really is, how best can it be identified/described in brackets after the name so that anyone who is deciding what to eat knows what they are letting themselves in for.

I agree with PhilGoddard.
If this is a recipe, where will the cooks get their Pfefferpeitsche (no 'r')?
Or is it a menu?
e.g. spicy german (smoked? cured?) sausage Similar to Salami, (made with pepper).
Also, rather than metres, I would consider a weight in grams.

A lot depends on what this text is for - if you came across "peppered sausage" in a recipe book, you'd probably say "I don't know what that is" and turn the page. You might need to give the German word, then an explanation of what it is, and then a suggested alternative if readers don't have access to this specifically German product.
