I know what is meant, sure. A slice of parma ham is wrapped around the steak and then fastened with twine. But what is the proper term for "Parmaschinkenrand"?

My choice would be to keep it simple. "Wrapped in parma ham" is certainly not uncommon, even in first class restaurants.
