German term or phrase: Spiegel

This is a menu for UK tourists and an appropriate term just will not come to mind:

...angerichtet auf einem Spiegel von leichter Krebssauce

If the phrase "angerichtet auf einem Spiegel" implies the main ingredient is sitting on top of the sauce, and is therefore meant artistically, one could maintain the artistic sense and retain this meaning so: replace the verb "angerichtet" with an artistic term like "suspended", then drop the subject "auf einem Spiegel" which becomes redundant, given the artistic component has shifted into the verb.

Asker: Had considered this, but felt bed implies a bit more, i.e. vegetables or lettuce but maybe not a sauce. However, Ramey's suggestion is a possibility.

Explanation:
Ich musste erst ein bisschen nachdenken, aber jetzt ist es mir eingefallen: man nennt es "coulis" (herzhaft z.B. als "red pepper coulis", oder als Dessert "berry coulis".

"Coulis (von franz. couler: fliessen) sind erfrischende, fruchtigen Saucen, die als sogenannte Spiegel unter oder als Sauce zu einem Dessert serviert werden. Gut kombiniert machen die intensiven Farben der Coulis jedes Dessert zum Star. Die Früchte oder Beeren werden für Coulis zuerst zerdrückt oder püriert und meistens durch ein feines Sieb gestrichen, damit alle Schalenteile und Kerne zurückbleiben und die Fruchtsauce fein wird. Das Besondere an Coulis ist, dass sie aus frischen, rohen Früchten hergestellt und eher selten erwärmt werden.

Für Coulis eignen sich v.a. farbintensive Früchte und Beeren, z.B. Aprikosen, Brombeeren, Erdbeeren, Heidelbeeren, Himbeeren, Kirschen, Kiwis, Preiselbeeren, Cranberrys, rote und schwarze Johannisbeeren, Mangos, Papayas, Passionsfrüchte, Pfirsiche, Pflaumen und Zwetschgen."

Die Bezeichnung "Spiegel" läst sich damit erklären, dass die durchs Sieb passierten Früchte durch ihren Pektingehalt nach dem Kaltwerden gelieren und dann ein bisschen "glasig" ausehen.
