This is a menu for UK tourists and an appropriate term just will not come to mind:

My thanks to everyone for their contributions. There were so many possibilities I didn't know who to attribute the points to and in the end I avoided the Spiegel by saying "presented on a light crab sauce".
This is not really a gourmet restaurant, though it does have "Allüren". The complete dish is:
Gebackene Champignonköpfe, mit frischen Lachsscheiben, auf Kartoffelrösti, angerichtet auf einem Spiegel von leichter Krebssauce.
I think it might be helpful to know the entire description of the dish and to learn what type of restaurant it is. If it a gourmet type restaurand you can get as creative as having xyz "floating in a pool" or simply "paired with". Food critics love to describe food sitting, swimming, bathing etc. in "pools", "meres", "mizzles", "baths" ...

Explanation: If the phrase "angerichtet auf einem Spiegel" implies the main ingredient is sitting on top of the sauce, and is therefore meant artistically, one could maintain the artistic sense and retain this meaning so: replace the verb "angerichtet" with an artistic term like "suspended", then drop the subject "auf einem Spiegel" which becomes redundant, given the artistic component has shifted into the verb.
