Hi all

This is a compulsory subject from a grade transcript from a Höhere Lehranstalt für wirtschaftliche Berufe und Tourismus. I'd be grateful for any suggestions on how to translate this.

Thank you.

kitchen management and food (or restaurant) service
Explanation:
This is the name of the subject when I studied it, although referring to it as restaurant service would also be possible. The course covers how to manage (organise, run) a professional kitchen and the art of serving food (ie. restaurant service).
