I am thinking along the lines of:

In sociological research, we have evidenced the application of economic principles being on the advance during past decades, leading to the dispersion of market structures: ...

But there is bound to be a more elegant solution. I would appreciate any suggestions.

streamlining processes

Explanation:
Just a hunch. One of the ideas behind "ökonomisieren" is to avoid waste and operate more efficiently - at least that's my understanding of the word. Anyway, enhancing efficiently, "lean management" and so on is what "streamlining" is all about.

Perhaps something along these lines:
"In sociological research, over the past few decades we have witnessed streamlining processes that have led to the widespread introduction of market structures..."

an "expansion" of market structures (as Barbara suggested) is better - (widespread introduction goes too far)

agree  Steffen Walter: I believe "Ökonomisierung" is more about the increasing application of private/market economy principles to the public sector, as in your addition.

-> Thanks, Steffen. Yes, I agree. It's about making the public sector more efficient by increasingly forcing it to operate according to the same principles as the private sector.

marketisation

Explanation:
I agree with Steffen that this is about the spread of market/neo-liberal principles but the reference to listed companies makes it clear that we're not just talking about the public sector: not everything in the private sector is necessarily done in strict obeisance to the dictates of the market, and this is about extending the areas where it is.

'Marketisation' rather overloads your sentence with 'market-' given that you've already got 'Marktstrukturen/marktähnlich' etc and may require some rephrasing but I think this would be the best and widely used one-word rendering of the concept.
