This is not baking powder, which must contain potassium bitartarate and sodium bicarbonate. Amylase is a classic ingredient in flour improvers as it increases the sugar content, reducing raising time.

Baking agents

Explanation:
Backmittel is a general term, in which all ingredients that are in the mixture are "summed up together" ! -Amylase, Emulgatoren E322,......, are the ingredients of that mixture, that also includes soya flour, and also vitamin C ! Some of these products are necessary to preserve the product!
