delicatessen specialising in cold meats and cheeses

Explanation:
Personally, I think I'd avoid the word "butcher", as it sounds a bit crude for a "Feinkost" shop. But delicatessen covers the "Feinkost" bit, although you could say "high class delicatessen" or "high quality cold meats and cheeses". Or leave out "cold".

agree  Jutta Scherer: sounds g4eat - but why cheeses? :-)

agree  Paul Skidmore: unless "meat" is particularly important in this person's cv or working life, I like "high class/gourmet delicatessen"
