German term or phrase: Gurkennage

The recipe below is for "Gurkennage" (as part of a main course of Gefüllter Nordsee – Glattbutt mit Mosambik Carabinero an Gurkennage und grüner Remoulade).

Is it just "cucumber salad" or is there another word for it?

Gurkennage
Rezept für 4 Portionen.
2 Schalen Pepquino ( ¼ telt)
1 Stk. Große Gartengurken (geschält, entkernt, gesalzen)

Vinaigrette:

Schalen von 1 Gartengurke
½ Bund Dill
30 ml Gurkenessig
30 ml Weißen Portwein
2 Eßl. Traubenkernöl
½ Teel. Xanthan
20 ml Gurkenwasser
Meersalz und Honig

Bis auf das Traubenkernöl, alle Zutaten im Thermomix pürieren, passieren
und mit dem Traubenkernöl moutieren, bis eine sämige Konsistenz
erreicht ist.
Die geschnittenen Gartengurken salzen und ca. 1 Std. auswässern lassen.
Das Wasser auffangen und für die Vinaigrette verwenden.
Die Gurkenwürfel mit der Vinaigrette marinieren und kalt stellen.

À la Nage – Cooking à la nage means poaching food, usually seafood, in a court bouillon and serving the court bouillon and the vegetables around the food as part the garniture. When making a court bouillon to use for cooking à la nage, cut the vegetables in a decorative manner, such as julienne.

AnoFür die Weißbier-Nage:
Schalotten schälen und fein würfeln. In einem Topf mit etwas Butter andünsten.
Kümmel zufügen und mit dem Fischfond auffüllen. Alles zusammen gut
einkochen. Dann mit der restlichen kalten Butter sämig aufschlagen („montieren“) und gut durchmixen. Mit dem Weißbier abschmecken.
Schnittlauch fein schneiden und in die Sauce geben.
