German term or phrase: Sagschneider
I suspect this is a man who cuts saw blades from metal. Text is from Tyrol in Italy; webpage text is contemporary, so grandfather's time would probably be early 20th century. Confirmation, correction or proper term in English wd be appreciated.

Context: "Diese Legende ist uns von unserem Großvater überliefert worden, einem Holzhändler und *Sagschneider*, der die Geschichte von den Kollegen seiner Zunft erzählt bekommen hatte."

A few musicians who were talented in both artistry and craftsmanship made organs themselves for their own use. Canon Florian Zoller, in the Neustift Monastery of Augustinian Canons since 1723 and Father Martin Ritsch OSB (1802-1859) of Marienberg Monastery built small instruments. A “Sagschneider” (owner of a sawmill) in Eggen, who was also able to play the organ, Peter Eisath (†1899), constructed a few organs for domestic use.

Excellent research as usual. I used 'sawyer' as most comprehensive and to take account of 'seiner Zunft.'

woodcutter, logger, lumberjack

Explanation:
I am a Tyrolean myself and would like to explain that a Sagschneider is a person who fells trees and cuts wood (with a saw). Therefore I would suggest the terms woodcutter, logger, or lumberjack as a good translation.

I would also like to add that Tyrol is not in Italy but in Austria. The Northern region of Italy that used to be part of Austria is known as South Tyrol or Alto Adige.
