Sorry, I should have asked this in the main question as this is really what I'd like to know, but it's my first question and I'm still getting to know the ropes. Thanks for your replies so far.

Mention of the diaspora (and Schwestern in your other query) led me to the Moravians. The headmistress or principal of a school was called a Vorgesetzte on several Web sites about Moravians, including the one I've given. Also Heath's German-English/English-German dictionary (1888) gives "principal" as a translation of "Vorgesetzte."

Explanation:
In view of my previous answer and assuming that this was a Bethel deaconess home or a similar institution, I assume she had the responsibility of counselling or overseeing resident girls training for service, something akin to a dormitory counsellor, whereby the guidance aspect would have been important.
