brisket is a term from the gastronomy and a slaughterhouse does not cut briskets, they perform major cuts such as halfing a cow etc. I am looking for the verb for zerlegen/zerlegarbeit. Butchering is close but I am wondering if there is another term
I thought of that too. THe equipment is for large slaughterhouses, a saw that "zerlegs" - takes apart, cuts, butchers. I am looking for a specific term and I think there should be one. Dismembering I think is not good.
