I need some Swiss help please!

This is from an employment reference, issued by coop Graubünden:

In the web I found:
http://www.anwaltspraxis.ch/weisungsbefugnis.htm

Does this mean that a Bankmetzger is a junior butcher?

Before being a Bankmetzger Mr. xxx worked as a shop assistant in a butcher's.

Many thanks in advance!

Hi Kim
In SA we differentiate between the person that knows the cuts and does the physical jobs and the person that makes the wors and prepares the lekker stuff and also worries about the admin.

Thanks a lot! I fully agree with the explanation and go for Kim's suggestion of retail butcher because I've never heard of the block man and can't find him anywhere, especially not in Australia.
What's a wors, dear Wolf? I hope it's lekker.
It can't get any worser! Dear Kim, I have some more Metzger-Questions I am trying to solve, but I might hit you with them soon.
Thanks and regards, Uschi
