This is from an employment reference, issued by coop Graubünden:

Wir bestätigen hiermit, dass Herr xxx vom 1.12.1993 bis am (!) 31.5.1995 als Bankmetzger im Coop Center Arosa tätig war.

In the web I found:

In SA we differentiate between the person that knows the cuts and does the physical jobs and the person that makes the wors and prepares the lekker stuff and also worries about the admin.

Thanks a lot! I fully agree with the explanation and go for Kim's suggestion of retail butcher because I've never heard of the block man and can't find him anywhere, especially not in Australia.
