Alpha amylase is an enzyme found in wheat, if germination occurs there is a dramatic increase of this enzyme. The Falling Number is the time in seconds for a stirrer to fall through a hot slurry of ground wheat. The greater the amount of alpha-amylase in the wheat, the thinner the gelationized starch paste and the faster the plunger will fall through the slurry. A high Falling Number or the longer it takes the stirrer to fall indicates the wheat is sound and satisfactory for most baking processes. [Hagberg] falling number (FN) Explanation: [Hagberg] falling number (FN) IMPROVING FLOUR QUALITY OF PREHARVEST SPROUTED SPRING WHEAT BY PEARLING (excerptJ Alpha-amylase was measured by the Hagberg falling number (FN) method. Average FN values of the five sample lots (3 reps/lot) were 62, 92, 163, 187, and 425 (sound wheat) seconds. Sub-samples of each lot were pearled in a laboratory pearler for 0.5, 1, and 2 minutes to remove bran layers. In addition, replicated sub-samples of each lot were not pearled for comparison purposes. Pearled and non-pearled samples (800 g) were tempered to 14.5% moisture basis and milled in a Buhler experimental mill. Flour samples were tested for FN and rapid visco-analyzer (RVA) viscosity. Physical dough properties of the flour samples were measured using the Farinograph and Alveograph. Die Fallzahl entspricht der Dauer in Sekunden, welches ein spezielles Messgerät benötigt, bis es sich durch eines aus Weizen hergestellten Wasser-Mehlgemisches abgesetzt hat. Je länger es dauert und die Zahl hoch ist, desto besser ist die Qualität in Bezug des Klebers. Bei Auswuchsgetreide liegt unter anderem der Klebergehalt eher tief (wird für das Keimen benötigt), sodass es nicht lange dauert, bis der Stab sich absenken kann, weil der Widerstand vom Kleber gering ist. Wird deshalb eine bestimmte Limite unterschritten, so muss das Getreide zu Futtergetreide deklassiert werden. Mehl mit einem tiefen Klebergehalt kann nicht oder nur schlecht verbacken werden, weil die Brote nicht aufgehen. Ein weiteres Qualitätsmerkmal stellt das Hektolitergewicht dar. Dabei wird das spezifische Gewicht des Getreides gemessen und auf die Grösse eines Hektoliters genannt. So wiegen 100 Liter Brotgetreide zwischen 78 und 80 kg.
