I only found 7 hits on Google for Hirtenbraten, and most of them were just on menus, which didn't help working out what it was. One of them mentioned pork - hence my answer.

Kochschinken is 'officially' cooked ham. But as we don't eat ham raw, we don't need to make the distinction.
