German term or phrase: Brakes: Rippschraube
Used here in a railway brakes context, but such bolts are apparently also used on motor car brakes. See for an explanation. What do we call them in English?

The term Ripp.. refers to the seat of the head being ribbed, for a better grip, e.g. safety from losening.
The ter caliper bolts, and brake caliper bolts comes up on many websites. This one mentions the self locking feature.
