Indeed these are the points and lines in a graphical representation of a structure's geometry.
To the best of my knowledge, "Knoten" are nodes and "Stäbe" are bars.

When using 3D design packages, the nodes and bars can be dragged using your mouse to specify load conditions and supports for a structure.
