Explanation:
Beaucoup de recettes en français parlent d'étuver quand il s'agit de d'oignons, céleri etc coupés en morceaux qu'il faut laisser "cuire" quelques minutes.

Coupez en dés 1 carotte, 1 oignon, le céleri, hachez 2 gousses d'ail, une feuille de laurier, la fleur de fenouil, le thym, ajoutez-les aux arêtes et mélangez. Ajoutez, dans la casserole 4 clous de girofle, 1 c à café de poivre, 1 pincée de sel, couvrez et laissez étuver 5 mn.

Explanation:
Je pense qu'il peut tout simplement être question de "laisser mijoter". Sinon "cuire à l'étuvée" est également une bonne solution, il me semble.
