Pod względem klasyfikacji wyrobów cukierniczych marcepan i masy pokrewne stanowią podgrupę, do której w zależności od nasion użytych do produkcji mamy do czynienia z następującymi rodzajami wyrobów: marcepanem, percepanem, arachipanem, keszupanem.
Masy percepanowe:
Percepan - jest to „wyrób otrzymany z mieszaniny cukru pudru w ilości nie większej niż 74% masy wyrobu oraz miazgi obłuszczonych i pozbawionych goryczy jąder pestek moreli lub brzoskwiń, z dodatkiem mączki ziemniaczanej w ilości 0.25-0.35% oraz ewentualnie innych składników ,..; zawartość wody nie więcej niż 12%. Masy percepanowe są jakościowo gorsze od marcepanowych.
