Еще информация по зачистке мяса:
После обвалки следует жиловка и зачистка. На этом этапе удаляют поверхностные пленки, хрящи, сухожилия и лишний жир. Разумеется, полностью очищать мясо смысла не имеет. Соединительную ткань между мышцами оставляют, также как и тонкую поверхностную пленку. В заключении мясо нарезают на порции.
