Explanation:
Если только в оригинале не имеется в виду именно хруст. Но это, как упоминалось выше, все-таки "knuspriger Biss".
В соотв. с правилами дегустационного и лабораторноно анализа мягкость, вкус и хруст выпечки - это взаимосвязанные свойства, определяемые методом разжевывания. При этом определение хруста все-таки больше относится к аудиометоду. Потому мне кажется, что Biss в данном случае - если Вам из контекста точно не известно иное - это совокупность свойств, определяемых именно разжевыванием.
От структуры теста зависят эластичность, пористость, хрупкость, ломкость, мягкость, наличие корки (хрустящей или нет) и пр. свойства изделий.
О каких именно свойствах идет речь, я бы решал исходя из того, какие изделия описываются в тексте.
