Este es otro término problemático. Según parece un "nocker" la forma en la que queda un alimento cuando lo coges con una cuchara. ¿Tiene eso un nombre en castellano?

Apfelnockerl: Die Äpfel schälen, in kleine Würfel schneiden und mit Apfelmus, Zitronensaft und Calvados vermischen und zu Nockerln formen.

El Nockerl o Knockerl es un postre muy típico de Austria.Son como bolitas de algo dulce. También los hay de otros ingredientes. Está muy rico Decide tú la mejor forma de traducirlo, aunque yo lo dejaría como Knockerl (Bolitas ) de manzana.

he vuelto a leer tu frase -> formar bolitas/bollos de la masa me parece mejor en el contexto (instrucciones de guiso), porque formar \"nockerl\" se entenderá menos
