La referencia primera que encontré fue en http://www.lebensmitteltechnik.com/branchen/fleisc/irauwu.ht... pero solo enseña algo em inglés. Entonces busqué otras referencias, ya en español, y me parece que es algo ahumar o cocinado en el humo / vapor. ¡Buena suerte!
