Abhishek means Coronation or consecration by sprinkling water.
Explanation:
Translation source Sanskrit-English Dictionary by Vasudeo Govind Apte.

Abhishek is usually done after the washing of all the different murti's. Then you proceed to do 'Abhishek' on the chosen god. I have not been able to find a reference to the exact reason beind the procedure, but from hearsay of 'bujurg' in my family, it is done for 'calming' or 'pleasing' a perticular diety.
The materials used for doing an Abhishek can be water / milk / panchamrut or mixture of these.

Abhishek is generally performed on special occassions or as a matter of periodical puja service. For e.g Rudrabhishek for bhagwan shankar could be a weekly(every monday) or yearly(every Mahashiwratri) or every month on (Shivratri) etc. or it could be part of puja ceremony before a wedding takes place in the family etc.

As far as the 5 items that you mentioned, I believe you are referring to PANCHAMRUT that being the best of 5 food items that you can offer to god. However, they consist of MILK, CURDS(yogurt), SUGAR, GHEE, AND HONEY. Water is not part of PANCHAMRUT.

Water is just a commonly accepted cleaning agent.

Milk products and Honey or sweet items as offerings for god have been common in all religions. (Land of milk and Honey : Heaven) For Hindus the milk and its products have double importance. 1> The products come from a sacred animal i.e. COW. 2> As the majority of priests were practicing vegetarians, dairy products and honey were foods considered to be best and most nutricious of what you could offer to god.

I mis-spelled diety, pls read that as deity.

Just to add, the periodical abhishek is usually performed most of the times on Kul_Daiwat or Kul-dewata meaning the \"Deity of the Family\".
