Could they mean, "in valuta"?

Al fine di coprirsi dal rischio di oscillazione dei cambi in relazione alle commesse acquisite in valuta estera, la società pone in essere dei contratti di vendita a termine di valuta.

I translated "contratti di vendita a termine di valuta" as "sales futures in foreign currency". How does that sound?

currency forward contract
Explanation:
or just a "currency forward". You can call it a "a short currency forward contract" which indicates that you are selling (long for buying), however, you sell in one currency to buy in another.
This is a sort of alternative. If the contract is listed on an exchange then it is termed a future and you have the option of selling the contract to somebody else before it ends. Otherwise if it is an "over the counter" OTC contract, then you don't have that option and it is not called a future, but a forward.
As wiki explains:
A closely related contract is a futures contract; they differ in certain respects. Forward contracts are very similar to futures contracts, except they are not marked to market, exchange traded, or defined on standardized assets.[2]

You could skirt round the problem by calling it a "currency derivative", since both futures and forwards are derivatives.

Explanation:
I don't think you need to translate sales as it's implied.

Currency Futures are traded in the same manner as any other form of futures contract. However, instead of dealing in a tangible product like pork bellies or wheat, the exchange rate between two given currencies serves as the commodity for the underlying contract.

Futures contract generally translates as 'contratto a termine su valuta" so the 'da valuta' does seem a bit odd...
