I'm not sure what this term means. Taxable / Tax amount?

Hi Vanita,
I think that "corrispettivo" here is superfluous. It is just saying that this is the part of the takings which is (corresponds to, is equivalent to) tax. And the Difference is the total takings net of tax.

Explanation:
It is the sum between the revenue earned through POSs and the the rest of of the revenues, amount on which the tax due will be calculated (taking into account other factors, of course, namely the costs for the restaurant to be deducted).

As for the reference material, plenty of experience as a chartered accountant in Italy.

Unless I completely misread the question, of course.
