agree  marionclarion: a "fruttaio" = a place where fruit is kept and allowed to ripen slowly - so usually a cool, dark room, which does not have to be underground, like a cellar, though that does help!

Sugg. - if they were not underground

The old apple store would have looked something like the much larger one in the picture taken in another Victorian garden. Excess fruit of all kinds, including pears and peaches, were stored in such places which were well ventilated, dark and pest proof using flyscreens over the ventilators. The long-term storage of such fruit was a Victorian art requiring much skill. Through the store the owner's dinning room table would be provided with otherwise unobtainable delicacies throughout the year.

I don't know how fruttai were in old houses, but imagine they might have been some sort of shed type storage place - dark, cool and airy

Explanation:
Proprio qualche giorno fa un servizio del telegiornale (Gusto? Terra mia?) parlava di una specie di mele tipiche del salernitano, che vengono colte quando sono gialle e poi lasciate maturare in un "melaio": si tratta di un terreno aperto, protetto dalle intemperie con teloni, in cui le mele vengono disposte in ampi filari e parzialmente coperte con segatura. Dalla terra e dalla segatura su cui sono appoggiate traggono le sostanze nutritive per completare la maturazione ed assumere un colore rosso - infatti, quando la parte inferiore delle mele diventa rossa, vengono girate dimodoché anche la parte superiore potesse venire a contatto con il terreno e diventare rossa.
