Italian term or phrase: carnetta
Comparing meat etc. from several breeds and crosses:

"E’ risultato che il coscio, la spalla, il petto, l’ossobuco e la carnetta dell’ibrido XXX hanno dato le rese più elevate in carne, con la minore percentuale di osso e di grasso."

meat scraps
Explanation:
I found a helpful "tesi" that provides an answer. If you do a "find word" on the page you'll see the following: "[...] preparato con la carnetta, cioè con quelle parti muscolari difficilmente vendibili come tali."

Parts of the muscle system that cannot be sold "as is"? Must be cheap leftovers?

Maybe "trimmings," "discards," or "ground meat"?

Maybe better to say "muscular remains/scraps".

-> Grazie--I find this one very hard, however. I mean, in the sentence provided above it appears a very specific thing, yet I cannot identify any refined definition, let alone a English correspondent.
