Clarification request(s) and response
Sarah Jane Webb: 9:51pm Dec 5, 2007: Have found "carnetta di coppa" Porzioni di carne derivanti dalla rifilatura della coppa and "carnetta di pancetta"porzioni più interne dei muscoli respiratori
intercostali ed addominali. No idea what they're called in English!
Sarah Jane Webb: 9:53pm Dec 5, 2007: Perhaps you could use neck (coppa) and bacon (pancetta) scraps
Rachel Fell: 10:02am Dec 6, 2007: There's a mention of it here as though it's something specific but not sure what - http://www.parks.it/parco.po.to/pro-carni.html - and here - http://www.cciaamodena.it/usi_2005/testo_unico.htm
Alexander Chisholm: 3:51pm Dec 7, 2007: I agree that it sounds specific - also, because later in the document, it lists it along with all the other possible options. However, scraps might be the best solution.

meat scraps
Explanation:
I found a helpful "tesi" that provides an answer. If you do a "find word" on the page you'll see the following: "[...] preparato con la carnetta, cioè con quelle parti muscolari difficilmente vendibili come tali."

Parts of the muscle system that cannot be sold "as is"? Must be cheap leftovers?

Maybe "trimmings," "discards," or "ground meat"?

--------------------------------------------------

Maybe better to say "muscular remains/scraps".

-> Grazie--I find this one very hard, however. I mean, in the sentence provided above it appears a very specific thing, yet I cannot identify any refined definition, let alone a English correspondent.
