Hello.. this is the sentence. I know what they are talking about when the say "fascere", but I don't know the correct cheese making term... thanks.
Utilizzando un pezzo di spago sottile, con un capo legato ad una impugnatura di legno, il casaro tagliava a pezzi la cagliata proporzionalmente al tipo di forma che si voleva ottenere e la appoggiava sul piano di lavoro, “sa banca”, dove gli operai o i “premitori”, lo mettevano dentro le fascere premendolo, e spingendolo con le mani dall’alto, per consentire la fuoriuscita del siero.

I would imagine it's a wooden mould in your context and not the teflon ones they sometimes use today
